Kecap Asin Kikkoman diproduksi dengan menggunakan metode \u201chonjozo\u201d, yang merupakan metode pembuatan bir tradisional di Jepang, memanfaatkan kekuatan alami mikroorganisme untuk menghasilkan kecap dengan rasa dan aroma yang kaya. Proses ini memakan waktu beberapa bulan, tetapi pada saat yang sama, menghasilkan rasa yang khas, seimbang, dan kompleks dengan rasa umami (gurih) yang kaya. Sebaliknya, kecap yang menggunakan metode fermentasi kimia akan memiliki masa produksi yang sangat singkat tetapi cenderung memiliki kompleksitas rasa yang lebih sedikit atau tidak ada sama sekali tetapi dengan bau yang tajam dan rasa yang menyengat.
